Raspberry-Elderflower Royale

Ingredients

  • 1 teaspoon Callas Intense Raspberry Jam
  • 15 ml elderflower syrup
  • 15 ml fresh lemon juice
  • 80 ml cold Darjeeling tea or a delicate white tea (light and aromatic)
  • 40 ml sparkling water or a refined premium tonic
  • Ice cubes
  • Optional: fresh raspberries and a mint leaf for garnish

Preparation

1. Dissolve the raspberry jam in the lemon juice and elderflower syrup. Stir well until smooth.

2. Add the cold tea and stir again.

3. Strain the mixture if desired to remove seeds (for a clean, clear presentation).

4. Fill a coupe or tumbler glass with ice and pour the mixture over it.

5. Top with a splash of sparkling water for a light fizz.

6. Garnish subtly — for example, with a raspberry on a golden skewer or a fresh mint leaf.
