Tarte Tatin with Goat Cheese & Pear-Fig & Pine Nut Jam

Ingredients

  • 1 roll of puff pastry 
  • 2-3 firm pears, cut lengthwise 
  • 2 tbsp Callas Pear, Dried Fig & Pine Nut Jam 
  • 100 g soft goat cheese (e.g. Chèvre doux) 
  • 30 grams butter 
  • Balsamic vinegar 
  • 1 tbsp honey 
  • 1 handful fresh thyme 
  • Black pepper 

Preparation

1. Preheat the oven to 190°C.
Melt the butter in the pan.
Add honey, balsamic vinegar, and salt & pepper to the pan.
Arrange the pear wedges in the pan and let them caramelize gently for 5 minutes.

2. Remove the pan from the heat and spread the Callas Pear & Fig Jam over the baking dish.
Crumble the goat cheese and fresh thyme over it.

3. Place the puff pastry over the dish.
Prick a few holes in the puff pastry.
Bake for 25-30 minutes in the oven at 190°C.

4. Let cool for 5 minutes, place a platter over it, and flip it over in one go.
Serve on a nice platter.
